About Princess Galette

For years, I have served my loyal American customers with the traditional French Galette des Rois, a puff-pastry cake filled with frangipane, a sweet-almond-based paste. Its traditions date back to the Roman Empire Saturnalia Festivals and, centuries later, to the Epiphany remembrance of the Three Wise Men, the Three Kings.
I thought it was about time to bring this succulent cake forward in history, colors, and flavors.
So, I created Princess Galette, a cake to honor a world where everyone can have it all.

About Our Founder
My name is Mirjam. I was born and grew up in Germany, but I am French. I dreamed of America and moved to Miami, but I fell in love with New York. I trained in hospitality management, created the catering company, Cuis’In, and I now bake Galettes des Rois by the dozens.
I have always roamed the world with a passion for life, people, and food. Looking in the rearview mirror, I feel grateful to have worked with the leaders of iconic restaurants: Amnesia and La Voile Rouge in Miami; Ici, La Goulue, Orienta, and Le Colonial in New York.
Now that I have reached 50, I see myself more than ever as a contemporary leader: ambitious, independent, and fearless.
I just ran my first marathon and have launched Princess Galette so we can celebrate all of us—women and men—who strive for a world of success to-ge-ther.
